Ingredients: 1 1//2 cup flour, 2 tsp. baking powder, 1/2 tsp. baking soda, 1/2 tsp. salt, 1/2 cup rolled oats, 1/2 cup butter at room temperature, 1 cup firmly packed brown sugar, 2 medium size ripe mashed bananas, 2 beaten eggs, 1/2 cup chopped walnuts.
Preheat oven to 350 degrees. Grease a 9x5x3 loaf pan. Sift flour, baking powder, baking soda, and salt. Cream together butter and brown sugar. Add bananas, eggs and walnuts. Add dry ingredients slowly and stir until blended. Pour into prepared loaf pan. Bake until done about 1 hour.
Ingredients: 3 1/2 cups flour, 1/2 tsp. baking powder, 2 teaspoons baking soda, 1 1/2 tsp. salt, 1 tsp. cinnamon, 1 tsp. nutmeg, 3 cups granulated sugar, 4 large eggs, 2 cups canned pumkin, 1 cup safflower or canola oil, 2/3 cup cold water.
Preheat oven to 350 degrees. Grease two 9x5x3 loaf pans. Sift flour, baking powder, baking soda, salt, cinnamon, nutmeg and sugar. Beat eggs untill thick. Add pumkin, oil and water. Gradually add the dry ingredients. Stir only until blended. Pour into loaf pans and bake for one hour or until done.
Ingredients: 2 cups flour, 1/2 teaspoon salt, 1 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, 1 cup granulated sugar, 1 cup chopped walnuts, 1 beaten egg, 2 tablespoons room temperature butter, 1/2 cup orange juice, 2 tablespoons hot water, 1 cup fresh cranberries.
Preheat oven to 325 degrees. Grease a loaf pan. Sift the dry ingredients together in a large bowl, add beaten egg and butter. Combine orange juice water and cranberries in blender or food proccessor for 1 minute. Pour into loaf pan and bake for 70 minutes.
Ingredients: 2 1/2 cups flour, 1/2 cup granulated sugar, 1/2 cup brown sugar, 3 1/2 teaspoon baking powder, 1 teaspoon salt, 3 tablespoon vegetable oil, 1 1/4 cup milk, 1 egg, 1 1/2 tablespoons grated orange peel, 1 cup chopped nuts, 1 cup finely chopped dried apricots.
Preheat oven to 350 degrees. Grease two 8 " loaf pans. Mix all ingredients beat for 40 seconds, pour into pans and bake for 55-60 minutes, until wooden toothpick comes out clean.
Ingredients: 1 1/2 cups cherry juice, 1 1/2 cups orange juice, 6 1/2 cups sugar, 1 cup liquid fruit pectin.
Combine the cherry and orange juice with the sugar in a large sauce pan. Bring to a boil. Add the pectin, stirring constantly, bring it again to a full boil. Boil for 1/2 minute. Remove from heat and let stand for one minute. Pour quickly into hot, sterilized jars and seal.
Ingredients: 6 cups peeled and chopped tart apples, 2 cups peeled and chopped pears, 4 1/2 cups granulated sugar, 2 cups raisins, 1/2 cup white vinegar, peel from two oranges finely chopped, 1/3 teaspoon ground cloves.
Combine all ingredients in large soup pan. Place over high heat and bring to a rolling boi, stirring constantly, Reduce heat to simmer and cook slowly untill apples are tender and syrup is very thick and almost carmalized. Remove from heat and let stand for one minute and pour into sterilized jars, seal and store in a dark, cool and dry place.
Ingredients: 2 pounds Rhubarb, 2 large lemons, 5 cups sugar.
Cut the rhubarb fine. Remove the peel of the lemon and slice the peel finely. Combine rhubarb, lemon peel and the sugar in a glass mixing bowl, civer tightly and let stand overnight. Next day squeeze lemons, strain the juice discarding any seeds and pulp. Add juice to the rhubarb mixture and cook until quite thick, stirring constantly to prevent burning. Turn into hot sterilized jars and seal.
Ingredients: 10 cups zucchini, 3 green chilis or other hot peppers, 5 large onions, 5 tablespoons pickling salt, 2 1/4 cup apple cider vinegar, 4 cups sugar, 1 tablespoon ground mustard, 1 tablespoon tumeric, 1 tablespoon nutmeg, 2 teaspoons celery seed, 1 tablespoon cornstarch, 2 teaspoons ground mexican chili pepper.
Chop the veggies fine (use a food proccessor if you have one) and
put all veggies in glass bowl with pickling salt, cover tightly and let stand in refrigerator over night. Drain and rinse with cold water, twice. Mix with remaining ingredents and boil for 30 minutes. wait one minute and pour into hot sterilized jars, leaving 1/4 inch space on top of jars and seal.
Ingredients: 3 cups sugar, 4 tablespoons instant coffee, 1 quart distilled water, 2 teaspoon vanilla extract, 1 fifth vodka.
Bring the sugar, distilled water and instant coffee to a boil, turn down to low and simmer for two hours. Cool for one hour, then add the vanilla and vodka.
Ingredients: 1 vanilla bean (cut into 4 pieces), 2 cups sugar, 2 cups distilled water, 4 tablespoons instant coffee, one fifth of vodka.
You need a bottle that is at least 1/2 gallon. Put the 4 pieces of vanilla bean in the bottle. Put sugar and water in a saucepan and bring to a boil. Boil for one minute, remove from heat and stir in the instant coffee. Let cool to room temperature and then pour the syrup into the bottle. Add the vodka. Cork or seal the bottle tightly and put it in a dark closet. Shake the contents for two minutes every day for 30 days.
Ingredients: 3 cups sifted all-purpose flour, 3/4 teaspoon salt, 1/4 cup sugar, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1/4 teaspoon cream of tarter, 1/3 cup room temperature butter, 1 1/3 cup buttermilk, 1/3 cup raisins.
Preheat oven to 350 degrees. Grease one cookie sheet. Sift together flour, salt, sugar, baking soda, baking powder and cream of tarter. Cut in the butter with a pastry blender until mixture resembles cornmeal.Add buttermilk and stir until just moistened. Mix raisins in lightly. Shape into a ball and knead about 20 seconds. Place on cookie sheet and with the palm of your hand flatten dough into a circle about 7 inches in diamater and 1 1/2 inches thick. To prevent cracking during baking cut a cross on top 1/4 inch deep by 5 inches long. Bake 45-50 minutes. Take out and cool on wire rack.
