You can make delicious Christmas pies with the minimum of hassle by purchasing the pie crusts found in the refrigerated section of the grocery store (not frozen). Pillsbury's is very good. Not having to make your own takes the stress out of baking pies. These can be frozen for up to three months so you will allways have pie crust on hand.

Raisin Pie


Ingredients: 2 pie crusts, 1 1/2 cup raisins, 1/2 cup sugar, 2 tablespoons flour, 2 tablespoons fresh lemon juice, the grated rind of 1 lemon, 1 cup boiling water.

In a medium bowl place the raisins, sugar,flour and mix together. Add the lemon juice grated lime and boiling water. Stir and chill for about 30 minutes in the refrigerator. Take pie crusts out of package and unfold allowing to come to room temperature. Preheat oven to 400 degrees. Line a nine inch pie plate with pie crust and pour the raisin mixture into pie shell top the pie with other crust prick it all over with a fork, place on cookie sheet and bake for 30 minutes.

Sweet Potato Pie


Ingredients: 4 eggs, 1 1/2 cups boiled mashed sweet potatoes,1/3 cup sugar, 2 tablespoons orange honey, 1/2 cup finely cut pecans or walnuts, 2/3 cup milk, 1/3 cup freshly squeezed orange juice, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, 1/8 teaspoon salt.

Preheat oven to 450 degrees. Take 1 prepared pie crusts out of the refrigerator, when ready unfold and put into a nine inch glass pie plate. Beat the eggs in large bowl until they are very light in color. Add the sweet potatoes and sugar and beat it all together. Stir in the honey, nuts, milk, orange juice, vanilla and salt. Pour mixture into unbaked pie shell and bake for 10 minutes, then reduce heat to 350 degrees and continue baking for about 30 minutes or until a knife inserted in the center comes out clean. Cool and serve with ice cream or whipped cream sprinkled with nutmeg and grated orange rind.

Persimmon Cream Pie


Ingredients: 1 baked pie shell, 5 large ripe persimmons, 2 cups whipped cream, 1/8 th teaspoon lemon juice, 1/4 to 1/2 cup sugar to taste.

Cut of the tops of the persimmons scoop out the flesh puree in a food proccessor, make two cups of whipped cream and combine with the persimmon puree, lemon juice and sugar to your taste. Cover tightly refrigerate until chilled and up to 6 hours then pour into baked pie shell just before serving.

 

Pecan Pie


Ingredients: 1 9 inch unbaked pie crust, 3 eggs, 2/3 cup sugar, 1/2 teaspoon salt, 1/3 cup melted butter, 1 cup corn syrup, 1 cup pecan halves.

Preheat oven to 375 degrees. put the crust into a glass pie pan. Beat the eggs, sugar, salt, butter and syrup together with a rotary beater. Stir in the pecans. Pour into the pie crust and bake for 40 to 50 minutes or until a knife inserted in the center comes out clean.

Molasses Pecan Pie


Ingredients: 1 9 inch pie crust, 3 beaten eggs, 1 cup brown sugar, 1 cup molasses, 1/2 teaspoon salt, 1/4 cup room temperature butter,1 cup chopped pecans, 1 teaspoon vanilla extract.

Preheat oven to 350 degrees. Line 9 inch pie pan with pie crust. In a medium sauce pan beat the eggs, sugar molasses, salt and butter together on low heat until sugar is dissolved and the mixture has a syrup consistency. Add pecans and vanilla extract and pour into the pie crust. Bake for about 45 minutes.
