Christmas Brunch Recipes

You can mix or match any of these recipes according to how many people will be at your Christmas brunch.

 

Quesadillas with Fruit Salsa (24 wedges)

Ingredients: 2 11 oz. cans mandarin oranges drained and finely chopped, 1/4 cup minced fresh cilantro, 1/4 cup minced green onion, 2 tablespoons fresh lime juice, 8 (8 inch flour tortillas), 1 cup shredded jalapeno monterey jack cheese, 3/4 cup shredded extra sharp cheddar cheese, 1 cup finely chopped dates.


Combine mandarins, cilantro and lime juice set aside. Place 4 tortillas on baking sheets. Sprinkle half of shredded cheese, dates and green onion over each tortilla, top with remaining tortillas. Bake at 375 degrees for 6 minutes or untill hot . Cut each tortilla into 6 wedges. Spoon salsa over tortillas and serve.

 

Fruit Dip 1 (8 servings)

Ingredients: 2 cups yogurt, 2 tsp. grated orange or lemon rind, 8 tsp. honey, 2 tablespoon kirsch.

Combine and cover tightly until ready to serve. Serve over frozen fruit which you have thawed such as raspberries, peaches, melon etc.

Fruit Dip 2

1 cup yogurt, 8 tsps. orange marmalade, 1/8 tsp. cinnamon. Combine cover tightly refrigerate until serving. with fruit of your choice.

 

 

Cheese Souffle, (8 servings)

This can be made the day before and left to rest covered tightly in refrigerator before baking.

Ingredients: 8 ounces grated sharp cheddar cheese, 8 slices sour dough bread with crusts removed and cut into cubes, 1 tsp. dry mustard, 1 tsp. Kosher salt, 3 tablespoons finely chopped green onion.

When Christmas Brunch is 1 hour and ten minutes away pre heat oven to 325 degrees, pour mixture into ungreased baking dish 11 1/2 by 7 1/2 inches and 1 1/2 inches tall. Bake uncovered 1 hour or untill center is set.

 

Over Night French Toast

Ingredients: 8 slices french bread cut into fourths, 6 eggs, 1 1/2 cups milk, 2 tablespoons sugar, 1/2 teaspoon salt, 4 tablespoons butter.

Arrange bread in baking dish, beat eggs, milk, sugar and salt until fluffy. Pour over bread and turn each slice to coat well. Cover tightly and refrigerate overnight.

25 minutes before dinner preheat oven to 500 degrees. Arrange french toast slices on greased baking sheet. Bake about 8 minutes per side or untill golden brown.

 

Chili Quiche (serves 8)
This Quiche is good hot or cold which makes it great for Christmas brunch as you can prepare it earlier and leave room in your oven for other things that need to be served immediately after baking.

Ingredients: 1 can 7 oz. diced chilis (undrained), 1 pound grated Pepper or jalapeno Monterey Jack Cheese, 6 slices crispy bacon cut in small pieces, 6 eggs lightly beaten, 1/4 tsp. Kosher salt.

Preheat oven to 350 degrees, butter a nine inch square pan, layer with half the chilis, cheese and bacon. Repeat the layers and beat the eggs and pour over all. Bake about 55-60 minutes or untill knife inserted in center comes out clean. Let stand 15 minutes before cutting.

 

Artichoke Frittata

Ingredients: 4 eggs beaten, 5 saltines crumbled, 1/2 pound grated cheese, 1 6ounce jar marinated with liquid, 3 minced green onions, 2 tablespoons chopped parsley, 1 teaspoon minced garlic, 1/2 teaspoon kosher salt, 1/8 teaspoon pepper.

Preheat the oven to 325 degrees. Grease a 8x10 pan. Combine all the ingredients together and pour into the pan and bake for 35 to 40 minutes. Cut into 8 wedges and serve.

 

Chili Rellenos (6 servings)

Ingredients: 1 4 ounce can green chilies; rinsed patted dry and cut into strips, 6 eggs; seperated, 2 tablespoons flour, 3/4 teaspoons kosher salt, 1/8 teaspoon pepper, 1/2 pound shredded Pepper or Jalapeno Jack cheese.

Preheat oven to 350 degrees. Grease a 1/1/2 quart casserole. Beat egg whites to soft peaks. Beat the egg yolks flour, salt and pepper and fold into the whites. Spoon 1/2 of the mixture into the casserole and put 1/2 of the chili strips and 1/2 of the cheese on top. Repeat and bake for 30 minutes.

 

Can't Wait For Christmas Brunch Granola


Wet Ingredients: 2/3 cup water, 1 1/2 cup oil, 1/4 cup honey, 1 1/2 teaspoon vanilla extract, 1/2 teaspoon maple extract.

Dry Ingredients: 13 cups oats, 1 cup grated coconut, 1 1/2 cups brown sugar, 2 cups chopped nuts, 1/4 cup sesame seeds, 1/4 cup flax seeds, 2 cups wheat germ, 1 tablespoon kosher salt, 1 teaspoon cinnamon.

Preheat oven to 300 degrees. In very large bowl mix together the wet ingredients. Add the dry ingredients and mix well with your hands. Bake in shallow pans for 2 hours. Cool and store in airtight containers.

 

Apricot Cheese Spread For Breads & Muffins


Ingredients: 1/4 cup chopped dried apricots, 3 tablespoons orange juice, 8 ounces ricotta cheese, 3 tablespoons honey, 1/4 teaspoon ground corriander, 1/8 teaspoon allspice .

In a small bowl soften the apricuts in the orange juice for 15 minutes. Combine all the ingredieents in a food processor or blender untill well blended. Cover tightly and refrigerate for up to 3 days.

 

Cranberry Muffins (1 1/2 dozen muffins)


Ingredients: 2 cups flour, 1 cup sugar, 1 1/2 teaspoons baking powder, 1 teaspoon nutmeg, 1 teaspoon cinnamon, 1/2 teaspoon ginger, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 2 teaspoons grated orange peel, 1/2 cup room temperature butter, 3/4 cup fresh squeezed orange juice, 2 beaten eggs, 1 tablespoon vanilla extract, 1 1/2 cups coarsely chopped cranberries, 1 1/2 cups coarsely chopped walnuts or pecans.

Preheat oven to 375 degrees. Grease 18 muffin cups, or use paper liners. Combine the first 9 ingredients. Then cut in the butter until mixture is crumbly. Stir in orange juice, beaten eggs, and vanilla until moistened. Fold in cranberries and nuts. Fill muffin cups 2/3 full. Bake for 17 to 20 minutes or until golden brown.
